Thank you for commenting so thoughtfully. It’s clear you weren’t trying to criticize. And, I’m grateful you caught my typo.
My original title was “The Life-changing Magic of Sourdough Breadmaking.” And the current title was my subtitle. Unfortunately, the Editors of Heated changed it when they chose to curate it.
I was gutted, but I’m always grateful when my aritcle gets curated, so I didn’t complain. However, you’ve motivated me to change it back.
I published this in February, so the collective anxiety level wasn’t so intense. And the reader I had in mind when I wrote this article was someone who had given up bread. So many people are following Paleo and Keto diets, they don’t realize complex carbohydrates are an essential food group. I wanted to encourage those individuals to eat real, healthy bread.
But I don’t think this article should make people more anxious. Actually, there’s no better time than now for people to take back their health and wellness and pay attention to the foods they eat.
Grocery store bread is, unfortunately, a processed food. I’m a real food advocate and wish I could convince everyone to give up processed foods.
Many of my articles focus on encouraging people to return to the kitchen and prepare their meals from scratch, because food-industry foods are more deadly and disease causing than our current pandemic. It just takes decades for their food to make you sick.
I agree about the wheat. I thought I put the emphasis more on commercial yeast, but perhaps I’m wrong.
